Hotel Aris Centre, excellent location near Grande Place. I spent there a night after a terrible night at Hotel des Eperonniers (filthy hotel!). They have good prices for mid week. Breakfast is included. This is their site: http://www.arishotel.be/

Most of the hotels in and around the center will be more expensive during the week. In any case, even the high end hotels can have excellent deals -- mostly on the weekends, but we were surprised to find a great rate mid-week at the Royal Windsor. We also got a very good weekend rate at Le Meridien. Of course, this was two years ago and before the Euro came into effect (not to mention the current poor exchange rate between the Euro and the US$).
I found that the best way to get a very good deal was to e-mail or fax the hotels directly.
As to other hotels in the city center, I have heard good things about - but have never stayed at - the Amigo and the Novotel Off Grand' Place.

October 2002, we stayed 2 nights at Atlas Hotel, about 4 blocks from Grand Place. This is a good quality 'business' style hotel, clean, largest room I've stayed in for the $, good breakfast included. Very near restaurants, St Catherine's church, the Bourse, and G.P. The weekend prices are less than weekday.

I booked it directly thru their website, and received prompt emails to confirm. Arrived via train to Gare Midi and took a taxi for about 6Euro. Gare Central may actually be a little closer.

I second the recommendation for the Aris Hotel. We stayed there last May and were quite pleased. It hasn't a lot of personality, as it is a new, business-oriented hotel. But the rms. were clean, the breakfast was wonderful, and the location can't be beat for access to the historic downtown areas.
