If you prefer to be a little "off-center", in the most romantic surroundings in town (about a 10-15 minute walk to the bell tower) our favorite is Hotel Egmond on the shores of the Minnewater "lake of love".... The Beguinage is also just across the canal, and the Egmond sits on it's own park-like gardens...5 minute walking distance to the RR station and bike rentals.

Don't know what your budget is, but we thoroughly enjoyed Hotel de Tuilerieen. Great location, very nice rooms and staff.

Or, if you are on a budget, you can't go wrong with B&B Lut and Bruno Setola. The B&B has 3 large, spotless modern rooms (three flights up though)each with a modern private bath. Lut is a wonderful hostess and serves a fine breakfast that includes fresh squeezed OJ in season. The location is on a quiet residential street that is less than a 5 minute walk (about 3 short blocks)to Brugge's main square.

We stayed at the Hotel Prinsenhof a few years ago.

Very small hotel about a 5 minute walk from the main squares.

Though small I would stay there again.

We absolutely loved Huyze Hertsberge and can't wait to go back! It's a great B&B that is very highly rated on Trip Advisor (the owner also has Cote Canal, right next door (share common areas). The website is http://huyzehertsberge.be.
