Does one have to go to Marseille for good bouillabaisse? Where else in Provence can you find it done well?

the reason for the taste in Marseille for the bouillabase
is because some of the fish like rascasse. There are restaurants there that have STICKER reads that they are a designated true bouillabasse restaurant.

I don't know about done well as I haven't had it, but I know they serve it in a lot of cities/downs down there, like around Toulon and St Raphael. They have it in Narbonne, also, and I think lots of places served it in Nice. As to whether it is good, I couldn't say. YOur best bets would be near the coast around Marseille, probably. I'm sure some restaurants can be bad even in Marseille.

I would like to go to Chez Fonfon. I don't want to drive into Marseille. So I would need to take the train then a taxi. Would I need a reservation at the restaurant, how much time to get there, is this an all day affair, and similar questions were on my mind? Perhaps one can find bouillabase tasting just as good in Cassis? Just wondering.

I dined at Chez Fonfon at a lunch time. We did not have reservations (lucky?)It is situated in a beautiful small harbor. No it doesn't take all day but it is best to call in advance if no one else is ordering the dish. Some places won't make it if not contacted ahead of time. It's along the water so you don't drive into the inner city.

I had an excellent Bouillabaise at L'Ane Rouge in Nice. lovely setting right on the old harbor as well.
