Pretty good discussion so far. Just a couple of things.
If you are going to Venice they have passed a new law banning roller suitcases. Its a 500euro fine commencing May 2015 I think.
sdtravels has given you the rule of 3's which we use all the time travelling to Greece and Italy. Bring three mix and match outfits, that's it. Wear one, have one in the wash from yesterday and one clean for tomorrow. It works amazingly well and fits a small cabin sized piece of luggage. We have never exceeded 19 pounds using this method. My bag is actually a wheeled backpack so it gives versatility. We also carry a small day pack for all our electronics, tablets phone and cameras.
Washing clothes is simple just take them in the shower and stomp them or as my wife does just buys a small pack of washing powder and wash her stuff in the sink. Stuff dries quickly in the hot sun. Many small hotels and pensions have a clothesline on the balcony.
Greece is certainly a good place to visit as it quickly teaches you that overpacking is a terrible idea.

Apparently the wheeled luggage ban is not true

I always use a 21" roller bag regardless of the trip length. Laundramats can be found anywhere. As someone said above the longer you travel the happier you'll be with light er luggage.
