Best Cities in Spain?

We were in Spain over Christmas and New Years' '07. If we had it to do again, we'd definately visit the smaller towns/villages. Our itinerary was just Madrid and Barcelona with a day trip to Toledo (which was fantastic and a highlight of our trip).
I, too, felt Barcelona to be a bit "cold". For the most part I felt like they didn't like us very much. We tried to speak the language (albiet Castilian and not Catalan). In a tapas bar we pointed to a very lovely ceramic bowl of crusty, toasted bread drizzled with olive oil that the people next to us ordered. Why did we get a basket of wonder bread?
We were also robbed in a city park (Arc de Triomphe)in broad daylight (I know...it could happen anywhere...but we are fairly well-traveled and savvy and it has happened to us ONLY in Barcelona).
Both cities were VERY clean.
Sorry, if I'm not helpful describing where to go...but maybe this will influence where you don't go.
