April 2017 -Scandinavia
I am meeting my daughter in Amsterdam for her spring break during the second week of April . We would like to travel for an additional seven days/nights around Europe. I was mainly interested in Scandavian cities... I was considering Copenhagen and Stockholm but Helsinki and a side trip to Estonia also seem very interesting. Considering the ease of travel and the weather please give your recommendations . I am open to any suggestions.

If it were me I'd split it between Copenhagen and Stockholm. Helsinki is less interesting, although you could do Stockholm and the booze/buffet cruise to Helsinki and back from there if you wanted.

It really depends on what you want to see and experience! For many people, Stockholm takes 5 days, Copenhagen 3 days +, Helsinki 1-2 days, etc. (I haven't been to Estonia yet, and so can't comment.)
I recommend that you get some good guidebooks (or spend some time with a few in your local library), identify the things you most want to see in each location, check their opening/closing times on the internet, and mark them on a calendar. Pencil in your transportation, add some time on either side (for getting to/from your lodging, checking in/out, packing/unpacking, getting oriented, etc.). Then see how things fit together.
No bad choices -- just some very difficult decisions!

Sounds like you might be travelling during Easter, which is a holiday that is a big deal in Europe. So if you want to fly between the cities or take the ferry from Stockholm to Helsinki, it should be booked soon (and hotels/trains etc).
I would agree to split the trip between Copenhagen and Stockholm with a possible trip on the ferry thru the archipelago to Helsinki. You can achieve that in a week, unless you need to see every single thing in each city.
As to weather, May is a lovely time but it might be anything from rain to warm to cold so be prepared clothing wise for any eventuality. Winter has been very mild so far (apart from one or two heavy snowfalls) I was in Stockholm last month and there was no snow, but it was beautifully lit up in the dark evenings.
