We stayed in Seville for five nights, and loved it. Our apartment was perfect for us, and in a nice little neighborhood. We used the same leasing agency for a nice apartment in Madrid, too.

We were so lucky to find that apartment ourselves. A fodorite recommended Spain Select to us, and we used them for Seville and Madrid. (The name is changed now.)
We highly recommend it.
The apartment in Seville has that gorgeous, huge courtyard that you enter first, with lovely landscaping and gorgeous tiles. Nice rooftop seating areas, too.
Sparkling clean. Well-furnished. Our 2bdrm/2ba cost about the same as one nice hotel room.
We were met right on time when we arrived, and also when we left.
Happy to pass along the info.

I thought I had posted this before, but I'll try again.
I had friends, a multi-generational, multi national, very large family who took the whole estate, the Casa Palacio San Jose for their Christmas stay. The family member arranging this was a former Fodorite, but who no longer posts.
Back then it was booked through Spain Select (now called Home Club), who has since pulled out of the Seville market. Spain Select arranged to stock the refrigerator for their arrival, to arrange for their transfers, to purchase a rice cooker for them and to hire a chef to prepare their Christmas Eve feast. It can now be booked as well on Booking.com.
The Casa Palacio sits on Calle San José in the Judería, which is a car navigable street, although with sidewalks so narrow that one needs to move to the street if passing someone (I walked it recently).
It sits near the Café Leviés, which has impromptu flamenco at night that attracts a long crowd, lots of students,
there are several hotels on that long street that changes names several times, and it's also near the Modesto dining enterprise on the square and one of my favorite tapas bars, Vinería San Telmo, in addition to the places mentioned above by MoBro. From there it's under a 10-minute walk to the Cathedral.

We were thinking of a combo of driving & the train for longer distances (Seville to Granada).
I need to research what we'd like to see & do but here is a possible (very rough) itinerary;
Fly into Malaga & drive to Ronda. See the area Stay 2 nights
Drive to Jerez stopping at Estepona & stay for 3 nights with side trips along the coast
Drive to Seville. Stay for 3 nights Return the car.
Train to Granada stay the night .
Train to Malaga stay 2 nights.
Fly home
I may not be allowing enough time for the drive or sightseeing along the way. We can spend between 10 -12 days in Spain, not counting the travel days to & from the US.
We might take some guided tours in the various cities. Viator has been suggested as has "Local Guides". Any thought on these groups or any better alternatives? I really appreciate all your help & suggestions.

As bilbo says, Viator is not a tour company. They have no guides, no buses , they are just a reseller, so if you want to take an organized excursion it would be better to use a local company. The companies must pay a commission to Viator.
You can determine what tour company actually provides the service by clicking on “additional details” and scroll to the very bottom of these after clicking on “more”.
I think you will want at least a day more in Sevilla, as there is so very much to take in and another night in Granada to see both the Alhambra, the downtown monuments and the Albaicín.
