An Attempt To Recreate Kappacasein’s Cheese Toastie

Upon returning from our UK trip in May (yes, I’m working on the report), Tracy and I have been craving the Cheese Toastie we had in London’s Borough Market at Kappacasein’s always busy stall. Tracy found the basic ingredients for this incredible dish, and after tweaking a few things, she has come pretty close to replicating the taste. There are multiple cheese and onion varieties along with leeks that make this the best cheese toastie (or grilled cheese depending on which continent you reside and what equipment you use) we’ve ever tasted (outside of the Kappacasein stall). Try this with some crisps, a beer and end with sticky toffee pudding, and you can fill your monthly calorie limit in one seating. I'm also having Tracy take CPR lessons before the next time I try one.

I gained several pounds simply by reading this, even without any interest in the sticky toffee pudding. The sandwich looks dangerously addicting.

And you can get Founders Porter?! It's not available where I live.

They had it at Whole Foods. We have now found French mayo (Amazon, of course), so we might have to try this again. Please do not tell my Jenny Craig rep.

This sounds delicious! Borough Market was still closed when we were in London so missed trying this. But perhaps I will make it one of these days.

The Kappacasein stall is on the road between the market. Now open when the market isn't which is great.

I always pick up Montgomery cheddar at Neil's Dairy around the corner from the market.

I plan to try making a toasted cheese sandwich with my cheddar.

Hmmm... didn't know that. Good to know for future visit to London. The area around the market had places also closed. We were there after the terrorist attacks and the investigation was still going on.

Sounds delightful! I could almost smell the thing cooking while reading your directions.

I wonder if 2 hot cast iron skillets would work as a cheese press.
