Amongst Amsterdam's slew of ethnic restaurants are many 'Petit Restaurants' or small family-run or similar places - they may not always serve Dutch cuisine as the overwhelming number of restaurants patronized by locals seems to be ethnic ones - especially French and Asian - Dutch cuisine is best seen perhaps at FEBO's!
I have found Dutch department stores have very nice cafeterias, oft on their upper floors - sometimes with a great view - this is real downhome Dutch food - not a supermarket cafe but as inexpensive and quick as you'll find in Amsterdam. and you see all the fare before you. The main train station also has such a, for a cafeteria, nice cheap fast place - used to be on track one but not sure since rehab of station - haven't checked when I've been there.
