No worries about being on your own...it's a very "user friendly" city and almost everyone you will meet speaks english.
First tip is to prepare for all kinds of weather. Although this has been an unseasonably warm winter (so far) it will probably warm up by Feb. You should also prepare for rain: coats and umbrellas. Amsterdam is a walking city and one of the nicest things to do is to wander the canal district. Hunt out the "jordan" area and "the nine streets" for adorable shops and restaurants.
Your first day, when you're still recovering from your flight, is a good day for a canal boat canal. It's relaxing and can give you a nice view of the city from the water (usually tours are for 1 hour).
For restaurants, be sure to have a rijstafel (rice table) a dutchification of indonesian cuisine and a must for any visitor to the netherlands. Our favorite is the restaurant Sahid Jahid. The atmosphere is rather contemporary, but the food is the best of it's kind in Amst. Another popular favorite is Sama Sebo in the museum district. Public museums are closed mondays.
Safety...if you're going to use the tram system (and you should, it's easy and one of the best ways to get around the city after walking) be careful for pick-pockets. Beyond that Amster. is rather safe. Use common sense in places like the red light district.

Amsterdam is one of the easiest cities I've yvisited. Public transportation is good, many places are easy walking distance, many locals speak English. I think your biggest challenge may be the weather, since you're visiting in February.

I can attest to being pickpocketed on the tram. Had to hold on with both hands on the turns and, for once, I had put my shoulder bag on after my coat, so thief reached in and took my coin purse. Got about 30€... anything over that was in my moneybelt.
I've seen a couple dark empty streets that I declined to walk down, possibly female paranoia - otherwise have felt safe there.
It will be very cold in February.... I wear the Cuddl-duds long underwear and hubby wears thermals, and don't forget to wear a hat or cap.

We also encountered a pickpocket on the tram in Amsterdam. Fortunately he wasn't very subtle. That's the only pickpocket incident we've had in over 30 years of travel. Though we did see both a purse snatching and a necklace grabbing in Florence.
