I'm confused. Do you want suggestions for things to do after you visit Paris or Normandy? I assume you will start your eight day trip in Paris and end somewhere in Normandy. What are your interests?

Agree you need to provide more info>
What time of year?
What are your interests?
Do you want a place after Paris but able to fly out of CDG? Or are you looking for completely different areas and return airport?

I'm a little unclear on the timing and where you will end up, also. But it sounds like you want another country and with places, you could go anywhere, of course. But if you want to get to another country by train easily, the one missing from your list is Switzerland. It's pretty easy to get to by train from Paris. For example, you can get from Paris to Lausanne on a direct train in less than 4 hours.
You could see Lausanne and Montreux, for example, then take that scenic train to Zurich to leave or something like that, or go to Luzern. I've done that in reverse (Zurich to Lucerne to Montreux to Paris).
