Ennis, by far! There are shops like Beleeks (Abbey Street), Traditional Irish music at Cruise's (great Fridays) and a better choice of Restaurants. Someone here said Rose Cottage B&B was too noisy. You might try Ardlea B&B.

Helen,
Ennis isn't the most attractive town, but it has an honest, down-to-earth quality and buzz about it. Adare, meanwhile, has sold its soul to tourism, and tries to recreate an Ireland that never was.
Should you stay in Ennis, make a point of seeing the 13th century friary. Nearby sites include Quin Abbey and Craggaunowen, the latter of which is a living history museum which features, among other things, the Brendan, a boat used to recreate St. Brendan's voyage across the Atlantic.
If you enjoy live music, Ennis is a good place to be. It recently introduced a trad music center, the name of which eludes me, but it's a popular place for some of Ireland's best trad talent. I'm sure the town's tourist office can help you out and tell you if there are any concerts on tap.
Best of luck.
