I think your time of year is more important than Fri or Sat. Also, are you reserving in advance?
We reserved in advance for late June. Selected Sunday since essentially stores are closed on Sunday so we'll stay in Florence that day and visit sights such as Accademia, Synagogue, Piazza Michaelangelo, maybe Fiesole.

I don't think there is any difference between Friday or Saturday.
We usually try to go first thing in the morning. If you cannot get an early reservation late afternoon is good. We have also had success with a 1:00 p.m. time when many people are at lunch. Mid-morning and around 2:00 p.m. seem to be the worst times.
