I think the OP is confused.
Ventimiglia is the border station for the rain line between Nice and Italy. Pisa is very close to Florence, not to Ventimiglia. The trip from Nice to Pisa or Florence will take a good part of the day --7-8 hours with 2-3 train changes. I suggest this be changed to
Train Nice to Ventimiglia - Train Ventimiglia to Florence (4 nights with day trip to Pisa)
Train Nice to Ventimiglia - Day trip to Pisa (1 night)
Train Ventimiglia to Florence - (3 nights)

Note starting soon several daily direct trains Nice to Genoa - check www.thello.com for details, negating the hassle of changing trains at Ventimiglia.
