Take a look at Leading Hotels of the World (lhw.com) and Small Luxury Hotels (slh.com) for these and other wonderful hotels. Run a search here for opinions.
My choice would be the Georges V or the Plaza Athénéé, with the Hotel Bristol a very close third.

The Meurice is delightful and is within easy walking distance of the Louvre and the Palais Royal. Just across the Seine is the Musée d'Orsay, and Nôtre-Dame and the Ile St.-Louis are only a few métro stops away, as is the Ile de la Cité, with the Ste.-Chapelle and the Conciergerie.

BTW, there ARE no 5-star hotels in Paris. The highest category awarded by the outfit that does the ratings is 4-star luxe. Any hotel that says it has 5 stars is giving itself that rating; it's not official.
