Roast beef with remoulade sauce smørbrød is a classic in both Norway and Denmark, and all the thousands of Danish smørbrødrestauranter will have it on their menu. Tivolihallen in Copenhagen is my favourite smørbrød restaurant in Denmark: http://www.tivolihallen.dk/?lang=en

If you drop the idea of going to the top three Oslo restaurants, these are three suggestions of excellent and less fancy/formal places:

... and remoulade sounds of course perfect with grilled shrimp, never thought of that and have to try it, could be a great tapa!

I'll skip the French bistro but the other two look great.

Anyone have food ideas for Bergen? The fish market looks interesting and one of my favorite meals in Japan was at the Tokyo fish market.
