I think you’ll be glad that you chose to focus your time on Turkey!
As neckervd said, the answers to your questions really depend on your interests, but FWIW:
a) Although Turkey has changed since I was there in 2012, I was very glad to spend several hours roaming around the Goreme Open Air Museum.
b) I had 1.5 days in Antalya and was busy every single moment. If the cable car you mean is the one to Mt. Olympus, I have difficulty seeing how you would do it, as it is quite some distance away. Is it possible to get there without a car? That wasn’t an option when I was there…. I would think that other sites in / around Antalya would be a higher priority for most people.
With all due respect to neckervd, and noting that I agree that the archeological sites near Antalya include some wonderful elements, I would not consider them as impressive as Ephesus, which I thought one of the world’s gems. JMO.
If you haven’t already seen it, you might find some helpful information in my trip report:

Hi Kja, i've read your review last year and now again. thanks for all the info. Think I must extend the Hot air balloon ride Capadocia. Looking forward to our trip and the Paragliding over Oleduniz.
