The distance between Lucca and Pisa is so short I am a little confused why you would want to stay in a different place. Do you mean directly between Lucca and Pisa geographically or just somewhere around the area that lets you get back to Pisa for your flight. When is your flight? Do you have a full day to get back to the airport or is it a morning flight? This would make a difference as to how far you could go. Have you thought about Cinque Terre or up in the hills at Bagni di Lucca?

An interesting area between Lucca and Pisa is the area around San Giuliano Terme.

Visit either Santa Margharita or Camogli on the Portofino Peninsula for a seaside experience, or go to Hotel Porto Roca in Monterosso one of the Cinque Terre villages, hiking to the others.
