Lunch on Uetliberg, a visit to the Landesmuseum national museum across from the train station (to the north), a ride on a public boat on either the river Limmat or on the lake (on a good day you get distant views of the alps), a stroll through the old town (Muenstergasse, Limmatquai etc.)

In a full day, you could go to almost any place in Switzerland.
Zurich is by far not the most interesting nor the most scenic city of Switzerland.

Well, now that NECKERVD has opened the pandora's box, in a day from Zürich I would recommend Säntis in Appenzell, a cute town and an impressive mountaintop, an easy day trip from Z. that is amazingly rarely mentioned here.

I did a quick half day trip to Zurich from Germany a few years ago. It was a rainy day so visiting some scenic outdoor spot didn't seem so appealing - but I enjoyed Zurich, even in the drizzle. All I did was walk around and explore and take pictures when the rain stopped. I loved the feel of the old neighborhoods and the big clock towers. I'm sure there are more scenic places Switzerland but I wasn't disappointed in Zurich. (I do like cities and towns, though.)

If you want to leave Zurich for the day you certainly can but there is no need to leave. Zurich is a perfectly nice little city.
We spent 3 nights there, getting over jet lag from an international flight.

Lucerne is a short train ride from Zurich -which like Swiss native neckervd says underwhelms many -oh it is really nice but there are much nicer places -like lovely Lucerne on a lovely lake - and unlike Zurich a smallish city so manageable in just one day.
Trains are easy to use and just buy tickets at the station.
But I have enjoyed Zurich too - you can take a lake boat ride and on a nice day - there are lovely walks along the east side of the lake. There is also the hill-climbing trams that take you to lovely forests with easy walking trails.
