Yes to the new itinerary!
Yes to staying in Venice proper!
And no need to get nuts about which day trips you will do. You can decide when you are on the ground. You may want to choose depending on the weather, your mood, a festival you hear about, etc.
What's most important is knowing where you are staying and the train schedules. Then you're done!
