Hi sunnyside:
A few thoughts:
Yes this is doable. I don't really love 3-5 and maybe suggest that you drop Tramore and add a day to Kinsale.
I'm not much of a fan of Tramore. It's truly made for tourist with sort of an amusement park feel. If I were to stay in the area, I would chosse Dunmore East.
Tralee is an industrial town and doesn't have a whole lot to offer. I would choose something along the north Dingle Peninsula. Castlegregory has my favorite B&B, the Shores. Otherwise, stay in Dingle.
Doolin as a village has very little to offer. Three pubs and a couple of shops. On the other hand, there is a lot to see from there. What time does your flight leave? If it is in the morning, you might want to consider Ennis which I think has a nice city center with some good pubs.
I would suggest making reservations as soon as you set an itinerary. That's a busy time of year and you don't want to spend time going door to door looking for a place to stay.

Can I make a suggestion - while wojazz is a great source, you probably would have received more response if you had a better title. >>11 day itinerary<< could be asking about anywhere in Europe.
I'd consider re-posting w/ something like "11 days from Dublin to Shannon?" or even just "Ireland Itinerary?"
