Our itinary so far includes:
Day 1 Arrive in Madrid. Overnight madrid.
Day 2 Madrid, Take evening bus to Bilboa.
Day 3 Bilboa, overnight in Bilboa or a base close to wine country
Day 4 Visit Wine country and overnight there (please recommend a base).
Day 5 Bus/train to Barcellona. Stay barcellona
Day 6, 7 Visit Barcelona.
Day 8 day trip (please recommend).Overnight train to Seville.

We would like to spend an additional day or so in southern spain such as Granada etc.. but not sure which place to cut out. We are more architecture and histroy people than art /museum people.

If you enjoy architecture stick around Barcelona - there is loads to see and do especially if you are a fan of Gaudi - a must see is his cathedral the Sagrada Familia, also see the Pedrera and the Casa Batlo. If you are not a fan of Gaudi there is still so much to see and do there.
If you do got to Granada go and see the Alhambra but you must book your tickets in advance (over the internet is easy) to ensure the get the day and times you want - book the earliest slot possible.) Having said all that why dash allt he way to granada and then dash over to seville - just enjoy barcelona and seville and save up for another time and do granada and andalucia another time !

http://www.alhambra-patronato.es/
is the website I used.
We went 2 weeks ago and we started at 9.00 and left and 13.00 and I think we had only seen half of it - we spent 3hours in the palace nazaries and ran out of film !
Half a day lets you see alot - take a small bottle of water with you as you can get quite tired and thirsty walking a run and make sure you take the bus or a taxi up to it as its a real steep walk from the town to the alhabra
another good website just for general info is
www.andalucia.com - used this for info on granada and other parts of andalucia and always found it to be regularly updated and accurate
