Lines/ships for a foodie?

I am thinking of taking a Carribean cruise this winter, but am a little worried after reading people's comments about mediocre food. I LOVE eating out and fine dining, and am a little spoiled since I live in NY. Will I find gourmet food on any of the ships, or should I look into some other vacation?
Thanks for your help.

I did believe that Silversea had the best gourmet food until I sailed the World of Residensea. I thought I died and went to heaven.

Paul
