We are snorkelers too. We have been to Cozumel so many times we can't count but finally found a great snorkeling place, Money Bar Beach. There are many, many fish here. Friends cound't get over how good it was there. It is an $8 cab ride (for 4)then $2 to snorkel if they think of it. They do rent gear and think they even have lockers behind the 'store'.
In Grand Cayman walk about two blocks to the right when you get off the tender. Can't remember the name of the place but it is free snorkling right off the dead coral beach to the reef.
But you should go to Sting Ray City in Cayman!!! The ship wil have a tour here for a lot of $$$$. Its about half ship's price if you go with Captain Marvin, captainmarvin.com or enmail at [email protected] or StingrayCityCharters, stingraycitycharters.com. Both have two snorkeling stops then go to the rays. It is easy to get to both. Turn left when you get off the tender. Capt. Marvin is on the right, Stingray City the left a sort walk from the tender pier.
We are going to these ports in two weeks but don't know what to do in Ochos Rio. Been there a few times also. Dunns River Falls is great if you haven't done the falls. No snorkelung here but falls are worth it.You can fiind them on line. You can get a bus in the port parking lot to go there again less then the ship's tour. I am going to go to cruisecritic.com to ask about snorkeling here from any beach there.
I will check this post to see if anyone has good snorkeling there.

For Montego Bay, contact Carolyn Barrett at what used to be "Barret Adventures" and now has a different name:

We did a great tour of Mayfield Falls. It was a beautiful watercourse to hike. There were only two groups at the entire place. When we got back to the ship we saw the videos from that day at Dunns River--it was packed.
We were treated extremely well by very knowledgeable guides. Would highly recommend it.

cindy - you can check here to see if there is a roll call started for your cruise; its pretty cool - you can talk with others who will be on your sailing. You have to be logged in as a member tho to access the roll call section.
