Have done this itinary without Roatan.
Grand Cayman - We've been twice. One cruise and one land vacation. If you've never been there difinatley the Sting Ray City tour with two other snorkel stops. Look at Captain Marvan, Red Sail Sports or Sotos. Spend town in Georgetwon shopping. Buy the rum cakes. You can also do a full day island tour with Tropicana Tours.
Cozumel - We've been to Cozumek 4 times. Go to Chanakaab Park. $10 taxi ride from the pier. Beach chair service with great food. Decent snorkeling and if you go in the morning no crowds. Spend time shopping in San Miguel.
Princess Cays - It's just a place to get off the boat and lie on the beach and swim in the ocean. They provide a decent bar-b-cue lunch. They have booths set up to sell trinkets. There is a place behind the fence where locals sell their wares. You must have cash to buy from them. Reserve a cover cabana on-line with your cruise ship if you want shade. There is no other shade there. Decent snorkeling.

have done something like this on the Legend in the past
find shore operators to be cheaper better than ship operators
can save more than 50%.
Snorkel the ghost channel in Roatan www.anthonkeyskey.com
my fav... www.cruisecritic.com will have reviews/excursions
on many ship reviews for your ship filed there.
Happy Researching and www.insuremytrip.com always wise.
