It has a beautiful view over to st.john. A quick taxi ride to red hook where are there some pretty good restaurants. There is a decent beach, but I wouldn't call it fantastic. Lovely grounds and amenities. Great service by Caribbean standards. Good food at the outdoor casual restaurant by the condos.

I would definitely rent a car on St. john for a least a couple of days. On STT, it would be nice to make it over to Magens Bay (early, before the cruise ship folks come). You could take a taxi or rent a car and also do some shopping in Charlotte Amalie, if that interests you. Not the easiest island to navigate on your own.
There is an eco-tour outfit not too far from the Ritz that I've always wanted to try, if you are looking for something more outdoorsy.

Some people have talked about renting a car from STT and just using the car ferry to transport over to St Jon? Or should we rent one on each Island? Also any other things we should do or se while we are there, either Island? We are staying the Ritz on STT and the Westin St Jon (did we make the right choice with hotels or should we chose another? Thanks again!

Westin is nice, great pool area, but far from the best beach on the island. But the only hotel on the good north shore beaches is Caneel Bay, which is lovely but very expensive. I think staying at the Westin and then renting a car to explore the beaches is a good option. I personally think taking a rental car over on the ferry is not worth the hassle, though others may disagree.
