Again back to the question----yes, you have enough time to do it BUT once you get to SJ, it will be tough-VERY TOUGH to want to leave in order to go shopping !! That being said, it can be done---and I like your idea of renting a jeep and driving the North Shore and Center Line Rd (note: they eventually connect).
