Resort w/ In Room Kitchen
We are looking for a vacation destination where the rooms have kitchens (daughter has food allergies) and the resort is on the beach with pools. We don't need too much nightlife but nice restaurants are a must. We're also looking for something on the lux side as well. We've been to Turks & Caicos.

Marriott in Aruba has time shares that I think have kitchens in them. It is a large complex (we stayed in the hotel side).
One of the time shares is pretty new(surf club).
I am not sure if you would call it luxury, but it is a nice property and the restaurants in Aruba are very good.
This resort is on the beach and has several pools/restaurants on property.

Just came back from the Caribe Hilton in San Juan, PR and stayed in their Condado Lagoon Villas. It was a 1BR suite with kitchen. Was great since we have 2 kids. The rooms in this section are new and very nice (kids loved the huge tub) and the grounds are beautiful. I don't know if most people would call it lux, but we thought it was really nice. Several restaurants on the property (expensive but good) and kids eat free at the main restaurants and room service. Would definitely recommend it.

The Cayman Island have many, many such condo options (ie with kitchens) on the beach with pools, plus excellent quality supermarkets and over 100 restaurants of consistently excellent quality.
I am from Cayman, but travel widely in the Caribbean, and can say pretty objectively that Cayman would be an excellent choice.

If you want to do this trip in the states, Ginn Hammock Beach resort fits the bill. It's in Northeast Florida on the beach. Beautiful resort and amazing accomidations! We were very impressed our last trip. Harborside villas at the Atlantis could be another option.

I booked through BJs (warehouse) and it was a LOT cheaper. It was over half the price of booking directly through hilton and included resort fees which I've heard is not usually included. I think their travel site is bjsvacations.com

luluma - thanks! I checked and even including airfare for 4, the price is cheaper than just the condo on the Hilton website! I'm not a member of BJs, but for that amount of savings, it's worth the $40 fee (or whatever their yearly fee is).
