Highly recommend Villas of the Galleon. On a great stretch of beach on central 7MB. They are re-opening in Feb from the hurricane.

Your post is very general, and there are a ton of options that would satisfy your needs. www.caymanvacations.com should help narrow your search quite a bit. You need to decide on a couple of big factors such as price, and location. I know you said on the beach, but where on the beach....It's 5-6 miles longe full of resorts. Some are close to the action & conjestion, while others are more remote. You also have the choice of being on a less popular beach by choosing the eastern end of the island which is more isolated. The site listed above will answer a lot of questions.

We stayed at Turtle Nest Inn and loved it. The maids would do our dishes everyday (including baby bottles!) The beach there is a reef, so it is grassy, and the drive to town is about 10 to 15 minutes. But that allowed us easier access to the other side of the island. The rooms were great, had a full kitchen. I don't know if they have two bedroom ones or not.
