Help picking a resort

My boyfriend and I are in our mid-twenties and are planning on going to an all-inclusive in the Caribbean for 7 days, leaving Boxing Day or the day after, and returning just after New Year's (an expensive time, I know, but it's the only time I have off work). Neither of us has ever been to an all-inclusive or to the Caribbean before.

-We will be flying out of Toronto
-Our max budget is $2500 per person.
-We would prefer an adults-only resort as we imagine family-friendly resorts will have lots of children staying there at that time of year.
-We are looking mainly for a place with good food and a nice beach where we can relax
-We have mostly ruled out Cuba because many people have told us the food is not very good

We have narrowed it down to three resorts:
-Sensimar Seaside Suites, in Cancun
-El Dorado Seaside Suites, in Cancun (a new resort that is owned by the same group as the Sensimar and separated from it by a nude resort; you have use of both resorts' facilities);
-Viva Wyndham V Samana, in the Dominican Republic

All are roughly $2300-2400 per person.

The first two seem appealing in that they make up a larger resort so presumably more food options, and the rooms at the El Dorado would be very new and nice-looking. However we have read in reviews that the beach is quite small, especially on the El Dorado side.

The last one is appealing because the beach is private and supposed to be beautiful, but we wonder if we might find it boring being on a smaller resort (although we are not into partying or anything) and if we would miss out on some of the 'luxury' of the new rooms at the El Dorado.

Does anyone with experience in visiting Caribbean AIs have some thoughts that would help us decide between these resorts? (or have other resorts they would suggest)

I have not stayed at any of the above so cannot comment but would like to throw Secrets Maroma to your list for consideration. Its an adults only AI adults outside of Cancun on a beautiful strip of white calm sand beach. Transportation can be very easily arranged. The resort itself if immaculate, the food is fantastic with many choices and offers many activities you can choose to participate it. Beyond that the service is fantastic and everything meaning even phone calls to the US are included. We have been to many resorts and typically do not recommend an AI but this is one exception.
