I agree that this airport is really bad for food; they don't even have what I consider to be be the better fast food/chain restaurant options that some airports do (e.g., Charlotte, Atlanta). I flew on AA but also walked to other terminals (to find Starbucks) and ended up with Starbucks coffee and some sort of airport quality turkey sandwich. There is an area "Isla Verde" that is within a mile or two of the airport. If you have four hours, you might want to leave the aiport to have lunch.

At your own risk
... you might consider taking a taxi into isla verde to eat. When we went to anguilla last year, my DH convinced me to go to the Ritz for lunch during our 2 and a half hour layover. We did it, had a great lunch and were back in plenty of time. Others here will tell you not to risk it, but the Ritz is literally 5 minutes from the airport by taxi. We were on an american flight going to another american flight, so we had no luggage to carry etc. I would definitely do that again with a longer layover.
