You may want to consider St. Croix. You'll find plenty of activities to do there other than the beach, although I don't think zip lining is one of them.
Take a snorkel tour to Buck Island.
Take a tour with Tan Tan Tours for a fun day with some expert four wheeling through the forest.

Go kayaking in the bioluminescent bay for a unique experience. It's only available during certain times based on the lunar phase, but you can kayak during the day for a different tour.

Take a horseback ride on the beach and then into the ocean.

Rent stand up paddleboards on one of the beaches in Fredericksted.
Take a Discover Scuba course with one of the dive shops.
There are several different hikes to do, including Jack and Isaac's Bay.
Christiansted has historical places to visit. There is also the Whim Plantation to tour.

Be sure to enjoy a show one night with the Moko Jumbies. We went to the Pirate Buffet at the Renaissance Carambola where we stayed and we enjoyed it very much. The beach is beautiful at the resort so if you don't stay there I would suggest visiting it at least one day.

The Riviera Maya area of Mexico has what you are looking for. Ruins to explore, cenotes to snorkel, zip lining, and gorgeous beaches.
Just be aware you are planning to travel during hurricane season in the Caribbean.
