dwoodliff, I know nothing about guitars but I have a friend who praises Jean Larrivee to the skies (see www.larrivee.com/) for a handmade guitar. Budget will be a consideration.

Tom Lee Music http://www.tomleemusic.ca downtown on Granville St has a good selection.
Farther south over the Bridge there are 2 more excellent choices Long & McQuade http://wwwlong-mcquade.com 2301 Granville St &
Not Just Another Music Shop 2415 Granville.
Farther west Rufus Guitar Shop http://www.rufusguitarshop is another honest choice.
Personally I think Larivee's axes suck and their labour practises are abhorrent.

I don't know anything about Vancouver, but I do live close to the Canadian border in New England, and find guitars far cheaper on the US side. That being said I must take exception to Sam's comment on Larrivee guitars, they are exceptional instruments - I've compared them to Martins, Gibsons, Taylors and Guilds and think they are at least as good.I myself have a Canadian made Simon Patrick, another fine guitar. Sorry to digress from travel!
