Charlevoix itinerary help - night on Ile aux Coudres?

Charlevoix itinerary help - night on Ile aux Coudres?
Hi all,
Couple in their 40s looking for some help on a week long driving tour of the Charlevoix region. Kids will be away and we want to take advantage and have an adult getaway. We enjoy nature, good food and history. I am particularly interested in the "Route des saveurs" type attractions.
Our notional itinerary is as follows:
- 2 nights in Baie St Paul
- 2 nights in La Malbaie
- 2 nights in Tadoussac
- 1 night in QC (we have been to Quebec City before so it's just to break up the drive).
Is it worth it to also spend a night on Ile aux Coudres to enjoy what the island has to offer or is a day trip sufficient? The Auberge Les Eglantiers looks very cute. We plan to bike around the island, stopping at various sights including the mill and maybe rent paddle boards.

My husband and I did a very similar trip a couple years ago. We detoured to L'Isle-aux-Coudres on the way to La Malbaie. We spent a few hours on the island visiting the mill, the cidrerie and just driving around and felt we had a pretty satisfactory visit with the amount of time we had.
