Some (perhaps many) may argue with me, but I've always thought of Chiang Mai as Thailand's 'Ubud'. Of course, I've been visiting Chiang Mai for 20 years, and remember it back when it was a lot less developed than it is now.
The biggest difference is natural scenery. In Ubud, there's always something just around the corner. The area around Chiang Mai has some great scenic spots, but you have to travel to get to them.
Another big difference is accommodation. The vast bulk of Chiang Mai's accommodations are big tourist class hotels. You can count the number of 5 star properites on one hand, and you'll be hard pressed to find a pool villa anywhere in or out of the city.
