Thanks for taking the time to type this out. I will definitely try it. The last recipe I used called for marinating the cubed beef for a long stretch in the wine -- "until purple." It came out very poorly.
Sorry to be dense but what is a flat L-shaped whisk?

i knew that would cause a problem....this type of whisk has a long handle and then sort of a shoe at right angles at the bottom of the handle....the shoe is oval and has coils of metal around it to scrape the bottom and whip up the sauce a bit...the whole thing is sort of L shaped...
