Here's my recommendation list below assuming you'd like to try out some local cuisine while in India.

Delhi: Moti Mahal Delux (Greater Kailash)
Udaipur: The restaurant on the terrace of Jagat Niwas
Jaipur: Laxmi Mishthan Bhandar
Agra: Mughal Room at the Clarks Shiraz

In Delhi any 5* hotel will have good restaurants.

I have eaten at the Rambagh Palace before in Jaipur and its been fine every time.

I agree with jacketwatch - we'll often do dinner at restaurants in hotels. The food is quite good and authentic.
In Varanasi especially, we loved our stay at Hotel Shiva Ganges View (http://www.varanasiguesthouse.com/). They serve light dishes at the guesthouse and we sometimes took a cycle rickshaw out to some of the outlying hotels for dinner.
Have a great trip - you've got a great itinerary!

Will you actually have time to eat? 8 places in 12 days! Many will just be an overnight.
