I too leave for Myanmar the end of October, the 31st, and am also traveling with Myanmar Shalom. I was planning on sending my visa paperwork to Washington DC mid Sept.
My int'l tickets came from FF miles so I don't actually have a paper ticket, just an eticket itinerary. But it doesn't have a cost on it because the tickets were free except for taxes. Will a paper printout suffice.
My husband and I are still working, he in health care and me a small business owner. Should we just say we are retired so no one questions us? We are old enough to be retired.
Do I need Myanmar Shalom to send a copy of our itinerary printed on their letterhead or will a copy printed from the email PDF I was sent be enough?

A printed copy of your itinerary from the email will be just fine, and a print out of your e-tickets or even just your flights and times will suffice. Likewise, your occupational info will be fine. There was a time when the country was very careful not to let in journalists and photographers. They are less concerned now. Bur they will have no concerns about your occupations.
Even just a few years ago, people would get turned down for a visa and not know why. I haven't heard of it happening to anyone in the past few years. I'm sure you will be fine.
