I was in vietnam in 2004 and stayed in the Can Tho Victoria to explore the mekong delta. Nice staff, good food, fresh squeezed juice upon arrival, a pool. Much better accommodations than a lot of Vietnam!

Also, if you're ever in a bind, handspan travel was a TREMENDOUS help for us in securing train tickets (that we were unable to purchase online), and other random travel issues. And we even found them to have great english-speaking day tours.

I stayed at the park hyatt HCMC last year and loved it, great choice
I like the look of the residence in luang prabang but for me part of the joy of being in lp is staying in town, which it is not!
Look at the sofitel metropole in Hanoi(club floor) a truly wonderful hotel.

The Villa Maly is in town in LP and is lovely-a former Laotian prince's residence.

In Northern Thailand, stay at The Four Seasons in Chiang Mai, and if you are going up to Chiang Rai, Four Seasons is the place to go - it's a tented experience...incredible.

De la Paix in Cambodia, there is now a Raffles, it's outside of town, and you have to take the best room to have a proper experience.

Park Hyatt is very nice in Saigon, Metropole is spectacular in Hanoi, Nam Ha in China Beach is also gorgeous.

Pilgrimage Village is lovely if you are staying in Hue. A little way out of town and only 2 storey with a great pool, lovely gardens and very attentive staff. Their day spa is excellent as well - treatment rooms are surounded by gardens and water and extremely private. Highly recomend.
