Just curious...how hot is Thai food really?

I too like it very spicy. With the help of a thai phrasebook I asked for food very spicy (pet mak mak, ging ging)but found it to be less spicy than I like with one or two exceptions. I think they tone it down for farangs even if you tell them how you like it. The exceptions were the beef with basil in the restaurant in the domestic terminal of the bangkok airport and the papaya salad at the night market in Chiang Mai.
