India itinerary critique please

We were in India for one Holi and in Nepal for another.
In India we were in a village in a fancy place (home of minor royalty) my agent has suggested. The rules were that guests could not leave the grounds on Holi because so many of the local village men had come home from their far away workplaces to celebrate the holiday and would be getting quite drunk. Our agent had already told us that we could not use the car on Holi because of the potential of damage to the car.
Nepal was more low key than India as far as Holi but there were still celebrants throwing water at the car.
We loved Varanasi and I don't think 2.5 days is too long at all. And, we stayed in Varanasi itself and did not visit elsewhere.

Good to know, thank you Julies. We decided to fly out of Varanasi late afternoon before Holi, stay at a Delhi airport hotel briefly, and then depart for Dubai at 4:00 a.m. (switched Dubai to the end of our trip instead of the beginning.) I think what I am having a hard time accepting in this trip is that there is not much to do in the evenings, just dinner – no sightseeing or strolling. And most people eat at their hotels. It seems like a lot of down time.

I didn't eat in my hotels all the time my first trip (not sure how many had restaurants), somewhat more on my second, but a lot of posters here seem to feel it's safer. If you eat late and write a journal after eating that should fill up a good part of the evening.
Some places do have tourist things in the evening - there was a sound and light show in Khujaraho when I was there, and a make up and dance performance in Kochi. (Went to services in the Anglican church and Catholic cathedral there too, but it was Christmas.) However, I would be more wary about being out on the streets after dinner these days.
