I last visited SA in 2015, doing 4 days in CT and 9 days in KZN , visiting Valleys, a game camp and driving myself round an enormous wonderful game park, the name of which I have forgotten.

we are considering returning, doing the garden route for 5 days and then going to game parks in KZN .

My question is: is it safe to drive yourself about now?

We drove ourselves all around South Africa in late 2019 and in the 2 months we were there had no issues with safety. We started in KZN and made our way to Cape Town via the Drakensberg, Route 61 and the Garden Route. Our first self drive National Parks were Hluhluwe-iMfolozi and Isimangaliso both of which were pretty amazing but the best of all was Nyathi Rest Camp which is a small Sanparks reserve within the much larger Addo NP. It is close to the Garden Route and I would highly recommend a couple of days there.
