Thank you everyone for your advice. This is the new itinerary and just wanted to see what people thought!
Day 1 - Fly in late to SF- Stay SF
Day 2 - San Francisco
Day 3 - San Francisco
Day 4 - Drive to Monteray/Carmel early (stopping to see Santa Cruz)
- Stay Carmel
Day 5 - Explore Monteray/Carmel
- Stay Carmel
Day 6 - Leave Carmel to drive to Santa Barbara (stopping in Cambria, SLO, Pismo)
- Stay Santa Barbara
Day 7 - Explore Santa Barbara
- Stay Santa Barbara
Day 8- Leave early to head to La Jolla (stopping in Santa Monica, Malibu)
- Stay La Jolla
Day 9 - Explore La Jolla and head to SanDiego (stopping at Mission/And/or Pacific Beach)
- Stay San Diego
Day 9 - Explore San Diego - Stay San Diego
Day 10 - Explore San Diego - San Diego
Day 11 - Home early
My two main questions are:
I took out staying in Pismo (anyone feel like we should stay there?)
If we get to Santa Barbara late on the first night I thought we should stay one more night - Or we could spend the day in Santa Barbara and drive to Santa Monica at night (Any recs?
Thanks again!!!

Your itinerary is leisurely and well thought out.
We like to stay in Pismo Beach because there are an abundance of rooms there with spectacular ocean views--and a very good Thai restaurant.
The wine country around Paso Robles (south of Cambria) and Santa Barbara is very scenic.
We also like the drive on Highway 1 from Santa Barbara to Santa Monica (though the routing is a little confusing going through Oxnard).

No need to stay in La Jolla, or if La Jolla, San Diego. The two are adjoining each other. I would stay in San Diego and see La Jolla for the day.
Check Google map or www.viamichelin.com for distances between your travel points.

Several years ago, we went on a Hummer ride on the Oceano Dunes near Pismo. So much fun and such a unique area. We usually stay in Pismo/Shell Beach or SLO.

HTTY- what is the name of the great Thai place? We would like to try it next time we are down there.

It is Thai Talay at 601 Prince Street.
We were really happy to find this place because on recent stops in Pismo Beach the cost of our meals was disproportionate to the satisfaction they gave us.
