In this intimate art-filled restaurant with a slate courtyard, Matus focuses more on regional Mexican than New Mexican fare. Specialties include chile en nogada (poblano peppers stuffed with pork, pears, and raisins and topped with a walnut-cream sauce) and Mexico City–style tacos al pastor with shaved, seasoned pork, pineapple, and cilantro, plus a fantastic tres leches cake and a rich chipotle-chocolate cake. Join the locals at the north or south location of the Bean. The Bean roasts its own coffee, and the South Side location—where you can dine on an outside patio—offers good breakfast and lunch fare. The north location, in an adobe building, displays local artwork and is the more atmospheric of the two.

This casual, dining-and-quaffing pub is favored by off-duty ski patrollers and river guides. The menu mostly covers hearty sandwiches (try the grilled bratwurst and sauerkraut sandwich), soups, and salads. The microbrewery downstairs produces everything from nutty, dark stout to light ales, but you shouldn't leave without sampling the house specialty—Taos green-chile beer. There's live music on weekends, and in good weather you can relax on the patio.

The folks who frequent this upscale bar and eatery tend to be hip and sophisticated—just like the artful, Southwestern-based but cross-cultural food served in this minimalist environment. Local, seasonal produce, cage-free chickens, and homemade stocks are key to the fresh flavors and creative combinations prepared by chef Leslie Fay, a long-time Taos restaurateur. Small plates worth sampling include mac-and-cheese with mild green chiles and hickory-smoked bacon, duck-breast flatbread with orange-charmoula sauce, and black bean soup with a touch of cumin. The buffalo-brisket sandwich is a winner at lunch. Main courses range from blue corn–crusted red trout with cilantro-lime butter to hearty tamale pies. Worthy desserts include a coconut cake with mango cream and a lemon-and-piñon pound cake with blueberry coulis. There's a memorable Sunday brunch.

About a mile up NM 150 toward the ski valley from the landmark "old blinking light" (now a regular stoplight, where U.S. 64, NM 522, and NM 150 meet), this rambling adobe is known for its steaks, ribs, and enormous (and potent) margaritas. There's also a long list of tasty appetizers, such as posole stew and chipotle-shrimp quesadillas. Several huge burgers are available, plus first-rate chicken mole. In summer you can sit out in the walled garden and take in the spectacular mountain view. There's a wine shop on the premises, and the restaurant is owned by the same talented team behind Lambert's of Taos.

This enchanting South-meets-Southwestern-style restaurant across the road from the famed San Francisco de Asís Church is in a restored Pueblo Revival building with thick adobe walls and sturdy viga-and-latilla ceilings—it was run as a rowdy dance hall for generations by the town's iconic Martinez family (former resident and late actor Dennis Hopper used to party here). It's no less convivial today, as both an inviting spot for cocktails and happy hour snacks as for dining, in one of the beautiful salons with modern spherical chandeliers and local artwork. The eclectic menu features such flavorful fare as pecan-encrusted chiles rellenos with habanero posole, and pan-blackened sea scallops with mango salsa.

On Outlaw Hill in the foothills of the Sangre de Cristo Mountains, this old adobe homestead has 100-mi-long views and sunsets that dazzle. The outdoor patio encircled by a piñon forest has kiva fireplaces to warm you during cooler months. The decadent fare is well prepared, fully living up to the view it accompanies—try filet mignon with béarnaise sauce, buffalo rib eye with chipotle-cilantro butter, almond-crusted wild sockeye salmon with shaved fennel, or fall-off-the-bone braised Colorado lamb shank with orange and port-wine jus. Don't miss the tasty Kentucky bourbon pecan pie and crème brûlée with toasted coconut for dessert.
