Though there's an "official" menu, the staff will let you know what's freshest and suggest a wine to pair; just sit back and wait to be supremely satiated. Caveats: no pasta, no risotto; and since Francesco prepares each dish himself, service can be slow on weekend evenings, especially after 8 pm.
