On a tranquil street smack between the Jardin du Luxembourg and Montparnasse's timeless cafés and brasseries is the pleasant Sainte-Beuve. Thoroughly charming, sedate and classy place. Our room, in the front, was sizeable, soothing and had a small balcony onto which we threw open the windows, stepped out and became Parisians. The staff was warm and most pleasant. Breakfast might seem a little pricey, but it was tasty and aren't all the hotel breakfasts in Paris a bit dear? The slightest of slight drawbacks might be the location, which, while quiet and away from the tourists, is a bit of a walk from where we tourists nonetheless find ourselves, namely the Latin Quarter and Seine. On the other hand, your walk can take you through the Jardin du Luxemburg which is delish. I say go for it.
