Simple but sophisticated are words that come to mind when dining at Boudreau. The chef's passion for incorporating St. Lucian ingredients into the menu brings him to market regularly to choose the best fruits, roots, and greens to blend with fresh seafood and prime meats—or to create a vegetarian dish that's both filling and full of flavor. Seafood lovers may enjoy pan-roasted kingfish with tempura vegetables, mashed sweet potatoes, and maple mango sauce. Boudreau—which is rather casual at breakfast but becomes elegant at dinner—welcomes villa guests, yachties, and daytrippers alike. The open-air restaurant, which overlooks pretty Marigot Bay, is named for Walter Boudreau, a schooner captain who built the original hotel where Discovery is now located.
