There is an emphasis on Caribbean and South American cuisine infused with Asian inspirations. The kitchen reinvents classics with an island twist: jerk-rubbed foie gras with burnt-orange marmalade, and the signature jerked double pork chop, fire-tamed by guava-spiced rum glaze. Save room for such decadent desserts as a deceptively airy Cloud of Coconut Joy or rum-soaked banana fritters.
