Better roads and improved journey times between St. Catherine's and the coastal resorts—not to mention the easy availability of day trips to the interior—have combined to cause accommodation close to the monastery (and Mt. Sinai) to suffer in quality. If you want a luxurious stay, book a hotel in Sharm El-Sheikh and make an early morning start to reach the monastery.
