Orlando has Disney and Sea World and is inland. The temperatures can be cold, not quite Montreal cold (I am reading your screen name and assuming Montreal). We went in early Dec to Disney one year and it got very chilly at night. There Christmas themes and night time events are wonderful. You must purchase events in advance. I would buy them now.
If you want beach vacations, I would go south to get warmer. I prefer the west coast to the east. Fort Meyers would be a nice area. Key West is the farthest south, but I am not sure they have the best beaches.
It really depends on what kind of vacation YOU want. Your 3 year old will have a good time anywhere.

While we loved taking our kids to Disney World when they were that age, we usually made it a day trip if we were there any length of time. The one time we did stay at Disney, my mom was living in Naples and drove up to get him after two days and we drove down with our 8 year old two days later. Perfect for all.
It's just that with a three year old.. how much Disney can you really stand? When it comes to any of the big rides, one of you will always have to stay back so you'll most likely spend most of the day doing the little kid tour. As for me, I would much rather spend the time at a place with a great pool and a wonderful beach. And don't forget the great book for nap time!!
